Christmas is just four days away and holiday parties are well underway. It’s never easy trying to figure out what to prepare for your guests or what you’ll bring to the party. If you are like me, you leave it to the last minute, so you need something nice and quick. I have the perfect last minute recipe that is sure to be a party favourite.
Using phyllo pastry cups are so easy and make you look like a gourmet chef. You can fill them with anything, but my favourite is brie.
Here’s all you’ll need:
- Brie – remove the rind
- Mini phyllo pastry cups – pre-cooked
- Your pick of jelly (I love roasted red pepper, but a popular pick is apricot jelly)
All you need to do is place some half inch cubes of brie in the cups, put some jelly on top and put them in the oven for 5-7 minutes at 325ºF (just until the cheese is melted). If you are in a hurry you can just put them in the microwave for 10-15 seconds!
